Who doesn’t love to savor a scrumptious brownie?
A brownie can be eaten as a dessert or a snack that is usually made with chocolate.
It tastes like a combination between a cake and a cookie…but somehow better than either.
According to Evan Thomas of The Wannabe Chef, “A good brownie recipe should have melted chocolate in the batter. A good brownie recipe should have butter. Real butter.”
However, you may not have seen how to make this incredibly easy recipe for lemon brownie.
You’ll have to check it out for yourself, but then you can rest assured that these lemon treats are simply delicious.
What’s more, you don’t need many things to prepare this goodie.
Everything goes into one bowl, mix it up, and bake!
And the best part, maybe? There’s no butter in this recipe at all! Sounds interesting, right?
The recipe is inspired by Jenny Jones, who is a home cook sharing the recipes she makes in her kitchen, hoping to motivate more people to cook at home. She walks us through all of the steps in her video, but first, let’s go over the list of everything you’ll need.
Here are the ingredients:
- zest of 2 lemons
- 2 tbsp. of fresh lemon juice
- 1/4 tsp. of baking soda
- 2 eggs
- 3 tbsp. vegetable oil
- 3/4 cups of sugar
- 1/4 teaspoon of salt
- 1/4 cup of plain Greek yogurt (make sure it has at least 2% fat) or sour cream
- 1 cup of all-purpose white or wheat pastry flour (don’t worry about using wheat flour, it works extremely well in this recipe)
And for the glaze, you’ll need:
- zest of 1 lemon and 2-4 tbsp. of fresh lemon juice
- 1 heaping cup of powdered (confectioner’s) sugar
Here are the steps:
First thing is to preheat the oven to 350 degrees Fahrenheit (176 degrees Celsius).
And prepare an 8×8, or 9×9-inch square baking pan, covered with aluminum foil or parchment paper, to save you from having to do any greasing.
Remember to leave some extra paper on the edges of the baking pan, so you can pick it up and use it as a handle after you’re done.
Prepare to zest your lemons and make the juice.
Take your lemons and make sure that they’ve been washed. You can use any zester you would like however the easiest way to zest your lemons is to use a lemon zester, since that’s what they are made for, right?
If you don’t have a lemon zester, you can use the common box grater and ensure to use the side with tiny holes and teeth.
Then, put all the ingredients into a bowl.
In a mixing bowl, combine all of the ingredients for the brownies: flour, sugar, salt, baking soda, eggs, yogurt, vegetable oil, lemon juice, and the zest of lemons.
It’s time to get your hands dirty and start mixing!
Stir until smoothen for about 30 seconds. You’ll know it’s ready when the batter begins to look creamy. There is no butter in this recipe, as stated!
Now it’s time to bake your batter!
Set a timer for 20 minutes, and while the brownies are baking, we can get started on the icing.
In a separate cup, combine the powdered sugar, zest of a lemon, and the lemon juice, adding it very slowly. Stir well, and the mixture will begin to take on the appearance of a shiny glaze.
After 20 minutes, take them out of the oven with the excess aluminum foil.
Let it cool down in the pan for about 5 to 10 minutes. Then remove the foil from the bottom of the brownies and put them bottom-side down on parchment paper.
It’s just one more step! Spread the icing on top of the brownies, and you’d get to see that beautiful glossy top and smell the nice tang of fresh lemon zest.
Lastly, let it sit for few minutes and then cut it into squares.
These delicious and simple lemon brownies are now ready to eat!
